After completing his training and staging under a variety of chefs working in Vancouver, British Columbia, Canada, Brad Holmes opened up his own establishment, OLO Restaurant. His mission: to use the local bounty in concert with the seasons and showcase the amazing products and producers in the area for his guests using ancient and modern techniques. Sometimes he goes out to forage in the wild himself, as a way to further connect with the environment surrounding him. Brad’s restaurant is classified as farm to table, with a specialty in utilizing locally farmed, fished and foraged ingredients. In addition, many Ark of Taste products are served in his restaurant.
