Description

Kristopher has worked all over Canada, North America and Europe in some of the world’s finest restaurants. His goal is to connect diners to their food in a different way, by recontextualizing the ingredients on their plates. Kris is committed to using the best quality and most ethically produced products available. The kitchen at Latab Foods combines farm to table ethos with modernist cooking techniques and delivers a menu highlighting locally farmed and wild, foraged foods, some of which are farmed and foraged by the staff. Kris forages with his team and also maintains a community garden plot in Vancouver. Many Ark of Taste ingredients are featured on his menu, as well as Red Fife Wheat which is one of Canada’s Presidia. At Latab, the wheat is used to prepare their sourdough bread and to use in sprouted grain mix. In addition, he organizes monthly collaboration dinners with chefs, vintners, foragers, and bartenders to share knowledge around different ingredients.
