Description

Étienne Huot first worked in Calgary, Canada and then spent a year
staging throughout France in Michelin-starred restaurants. After those formal
kitchen experiences, he decided to travel across Canada meeting organic
producers. Then, he opened La Récolte Espace Local with two partners in
Montréal. It is located near the Jean-Talon Market and is a restaurant-catering
business that serves local and organic dishes. The vision for the cuisine was
inspired by French, Italian, and Asian tradition with a turn towards seasonal
ingredients from Eastern Canada. Between 70%-90% of the menu is comprised of
local and organic products, and the menus change consistently based on
seasonality and availability. The kitchen also uses Ark of Taste and foraged
ingredients to bring the mission to life for guests. Wild products, both fresh
and processed, are used throughout the year and are often at the center of
inspiring the creation of the menu.

Entrées

  • Velouté de courge, creme sûre au topinambours, bacon bits.
  • Mozzarella de bufflonne, tomates cerises, piadina.
  • Carpaccio de boeuf, légumes marinés, aioli au bleu, croûtons de brioche.

  • Spaghetti maison, courge butternut et morilles.
  • Poitrine de canard légumes, gnocchi, sauce soya et érable.

Desserts

  • Tarte tatin, crumble au cheddar, creme anglaise, chips de pommes.
  • Gåteau au fromage, courge confite, granola aux graines de citrouille.

 

  • Chèvre chaud, poires, endives, betteraves jaunes, patates croustillantes au fromage, oeuf mollet, laitue et toast.
  • Pain doré gratiné, pommes, boudins, sauces aux oignons, oeuf au plat, salade de choux.
  • Scotch eggs aux crevettes de Matane et pommes de terres, rémoulade de céleri-rave, purée de salsifis, bacon bits, pousses.
  • Bénédictine courges, lardons, oignons et cheddar fumé, taters ketchup, salad.
